Tuna Mac & Cheese


Cheese Sauce

  • 35g Butter
  • 12g All-Purpose Flour
  • 500ml UHT Whole Milk
  • 200g AFCMI Grated Cheese
  • 1 pinch Salt
  • 1 pinch Ground Pepper
  • 2pcs Egg Yolk

Tuna Mac & Cheese

  • 200g Tuna Flakes
  • 500g Cooked Macaroni Pasta
  • 80g Fresco Mushroom Pieces & Stems
  • 20g Breading


  • 50g AFCMI Grated Cheese
  • 50g Breading (refer to Chicken Tenders recipe)
  • 1pc Beaten Egg


In a sauce pan, brown the butter and flour. Add Bridel UHT Milk, AFCMI Grated Cheese, salt and pepper. Simmer until cheese is dissolved.
Remove the pan from the heat and add the egg yolk. Mix well. Set aside the cheese sauce.
In a separate bowl, mix together cooked macaroni pasta, 400g cheese sauce, 100g tuna and mushroom.
Transfer in a baking dish and pour remaining cheese sauce on top.
Add gratine (topping) before baking.
Bake at 170 °C for 20 to 25 minutes or until color becomes golden brown.
